Flourless Black Bean Brownies
||

Ingredients

These brownies are super fudgy, moist, and ridiculously simple to make. Even the most picky eater won't be able to tell they were made with beans! All you need is a powerful blender (or food processor) and you're good to go. Note: These are EXTREMELY addictive -- you've been warned!
Flourless Black Bean Brownies
  • 1 can blue menu black beans, rinsed
  • 1/2 cup + 2tbs cocoa powder (plus a little extra for dusting)
  • 1/2 cup maple syrup

  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tbsp milk (dairy or non-dairy)

  • 1 teaspoon melted butter or oil
  • 2 eggs, lightly beaten
  • 1 cup chocolate chips
  • Optional: ice cream for serving

Making your Batter

Preheat your oven to 375 degrees.

In a powerful blender or food processor, combine all the ingredients except the chocolate chips. Blend on high for a few minutes until everything is well combined and your batter is thick and very smooth. You may need to pause and scrape down the sides once or twice to make sure everything is evenly mixed.

Pour the batter from your blender into a mixing bowl and stir in your chocolate chips (you can stir them in your food processor too if you are able to mix them evenly).

Transfer the batter from your bowl to a greased 8" x 8" brownie pan. You can also line the pan with parchment paper if you prefer. Optional: top with some extra chocolate chips and dust with cocoa powder.

Time to Bake

Bake at 375 degrees for 30 minutes or until a knife come out clean. Let cool slightly before cutting into squares (if you can resist!). It's delicious on it's own, or served warm with a scoop of ice cream on top.
